Cream Cheese and Parsley Chicken

Great for lunch or dinner. Makes 2 servings.

Directions:

Pre heat oven to 350 and prepare 9x9 dish.

Mix cream cheese and parsley.

Butterfly chicken and evenly spread cream cheese and parsley on.

Cook for 30 minutes.

Taco Pitas

Also good with chicken! Makes 2 servings.

Ingredients:

• 2 pitas

• 1/3 cup canned black beans, nicely drained and rinsed

• 1 cup lean ground beef

• 1 diced scallion

• ¼ cup salsa

• 1/2 tsp chili powder

Directions:

In skillet warmed over high heat add beans, ground beef, scallion, salsa, chili powder.

Warm through.

Spoon into pitas
